Mock Spaghetti: Cabbage with Roasted Red Pepper (Nomato) Meat Sauce

Hi Friends,

Today I'm sharing my recipe for whole food Mock Spaghetti with Roasted Red Pepper Meat Sauce.  It is low in histamine, low chemical, low sodium, gluten and dairy free.  It is a healthier whole food version than traditional spaghetti.  While I am the only one in my family eating just whole foods for healing, I think they would LOVE this recipe!  There is a good bit of work to preparing the sauce, but it is OHHH SO worth it as I can't have tomatoes and this tastes so much like tomato sauce to me!!!  I also cook it in batches and freeze individual portions which makes it worthwhile.


Roasted Red Pepper Sauce (Nomato Sauce)

Ingredients:

4 Red Bell Peppers, washed, cut in half, deseeded
1 Small shallot, peeled, cored and cut in thirds
1 Large Orange Sweet Potato, wrapped in baking parchment then foil, bake until tender
2 -Half cup servings Organic Peaches in organic pear juice (I use Giant brand) or 1 peach fresh in season
1/2 Cup frozen cranberries, washed (don't skip this key ingredient--it gives the sauce it's tangy spaghetti sauce-like flavor)

Directions:

1) Roast prepared red bell peppers and shallot on a sheet pan covered with parchment in a preheated 400 degree oven for 40 mins.  After roasted, place in a large glass bowl and cover with a plate and allow to steam for 10 minutes.  This makes it easier to remove the skins.

2) Wash and mince frozen cranberries in small food processor and place in a medium-sized glass bowl.

3)  Process the 2 half cup servings of organic peaches and its juice until it turns to a smooth liquid.  Add to cranberries.

4)  Process the large baked orange sweet potato until smooth and add to the mixture.

5)  After peeling the red bell peppers, process them and the shallot until smooth and add to the mixture.  Stir until combined. (You may add your favorite organic herbs and spices, but I like to add the herbs when Im cooking my mock spaghetti to bring out their flavors.  Makes about 7 individual servings (one soup ladle per serving).  I freeze unused portions.

Mock Spaghetti with Meat
SERVES TWO

Ingredients:

1/4 lb. Ground grass-fed Meat of your choice (lamb, hamburger, buffalo, etc.) (I cook using smaller portions of meat but cook the desired portion of your liking.)  Cook, drain and set aside.
1/2 small head cabbage, cored and sliced thin.
1/2 box frozen artichokes
1 small sweet potato, cut in chunks (optional)
1 grated carrot
Dash of each Organic Herbs (I use basil, black pepper, turmeric, cumin, oregano, ginger and *ground mustard powder) but use your favorites that you love.

*TIP:   I add ground mustard powder right before serving.  This herb helps restore the sulforaphane (a powerful NRF2 activator) to the cabbage that cooking takes out.  I also add it to other greens like kale and broccoli after I steam them.

Directions:

1)  Use a medium to large stainless steel frying pan and add a cup or two of water.  Bring to a boil and reduce heat to medium.  Add frozen artichokes and small cut sweet potato.  Add sliced cabbage and cook on medium for 15 minutes. Add grated carrot midway through cooking and your favorite organic herbs and spices. Cook until tender, drain any remaining liquid.  Portion out onto 2 serving plates.  Sprinkle with organic ground mustard powder.

2)  Add cooked ground meat back to the pan and add 2 individual servings of roasted red pepper sauce.  Heat until warm.  Add meat sauce on top of cooked mock spaghetti.  Sprinkle with basil. Enjoy!

What To Do With Leftover Cooked Broccoli

I love salads, but sometimes it's nice to change it up and make a warm salad.  Today I'm sharing a creative way to use leftover cooked broccoli for a quick one serving warm salad, perfect for lunch.  I started with a little more than one cup of cooked broccoli florets that I reheated in the microwave.

Warm Broccoli Cranberry Walnut Salad

Ingredients

Leftover Tender Cooked Broccoli Florets
Danish Blue Cheese
Dried Cranberries
Chopped Walnuts
Kraft Creamy Poppyseed Dressing
Herb Seasoned Croutons

Directions

Reheat leftover broccoli in microwave.  Add a few crumbles of Danish Blue Cheese, a sprinkle of dried cranberries and chopped walnuts and a tablespoon or two of poppyseed dressing.  Top with herb seasoned croutons and enjoy.  If you love blue cheese like I do, you will love how creamy and slightly melted it gets over the warm broccoli.

Easy Peasy Cornbread Topping

Today I'm sharing my cornbread topping.  It's easy peasy and makes corn bread even more yummy.

My mother always made this cornbread from the little box. Do you remember this growing up?  I buy it for my family now and make it in an 8x8 pan.  It's great for three reasons.  1.  It's easy to make--just a little milk and an egg  2.  It costs less than a buck, and  3.  I'll tell you at the end of my post.


Now for the topping.  I love cornbread, but I always thought that cornbread needed a little something extra.  So here is the recipe that will keep your family asking for more.


Cornbread Topping

Ingredients:

2 T Flour
3 T Cold butter (cut in small chunks)
3 T Brown Sugar (packed)
1/2 t Vietnamese Cinnamon (I get mine locally at S. Clyde Weaver)

Directions:

Prepare cornbread mix as directed on box and put in an 8x8 greased pan.  Pulse topping ingredients in a small food processor for a few seconds until it resembles coarse crumbs.  Sprinkle evenly over corn bread mixture.  Bake in a preheated 400 degree oven for 25 minutes.  Serve warm with your favorite meal.  We use a fork and eat it like cake.   To reheat, microwave each serving for a few seconds.

Now for the third reason that it's great.  You can make a cool Christmas craft with the box, but you will have to wait until next time to see what I did with it.

Dinner on the Deck

  We recently refinished our backyard deck by replacing some of the boards and a much-needed fresh coat or two of stain.




Carl did the prep work and I did the painting, of course.  We make a great team!







Here is the pond and garden surrounding our deck.  The pond is right off the edge of the deck and this photo is what it looks like later in the season when all the sweet potato vines are full-grown.  We also have a japanese maple tree where the curly willow twigs used to be.  







It took a lot of patience this year to get the pond back into shape as we faced several challenges from the rough winter.  We had to replace the waterfall box, the filter, and all the piping due to freezing & cracking problems and then the loss of many fish from a pesky blue heron.  All the trees behind our pond were also lost due to severe weather and they will have to be cut down this spring, but we are happy to say that we are finally on our way to getting things back into shape.  Our neighbor was kind to offer us some beautiful flowering shade plants that they wanted to get rid of and they are starting to grow.  (Thanks, Lester & Lois!  You are a blessing!)  The challenges we faced with the pond this year were only the tip of the iceberg.  We faced several other challenges that seemed overwhelming.  Everything seemed to come at us at once.  However, we were reminded that we can trust God, one obstacle at a time and one day at a time and that He will take care of us.  He showed us his care through different people in our lives.  For this we are so thankful!

Yesterday, we decided to have dinner on the deck.  It was a beautiful day and it was nice to finally hear the tranquil sounds of the pond running again!

We had kabobs and twice-baked potatoes.  Yum!  We made the kabobs with chicken, zucchini and mushrooms, loaded them with BBQ sauce and cooked them on low heat for 20 mins.  In retrospect, they could have used some pineapple chunks or tomatoes for added color, but they were DELICIOUS!  We also made a few kabobs with the leftover chicken pieces, to add a little more meat to each of our plates.

A Cupcake Tradition

 Whenever we go on vacation, we have a tradition in our family to search for the best cupcakes in the area.


 A few years ago while we were in Rockport, Mass. checking out "Motif #1" for a future painting, we found a little place that made cupcakes that claimed to have cake in the frosting and frosting in the cake.  We inhaled the cupcakes and bought a few extra for the ride home.  A few weeks later, while we were all experiencing cupcake withdrawal, I decided to see if I could replicate something similar.  The cupcakes we had were chocolate mint flavored, but our family favorite is any kind with peanut butter and chocolate in the mix.  After a little practice, this is what I came up with to re-create "cake in the frosting and frosting in the cake."



Peanut Butter Frosted Chocolate Ganache Cupcakes


Ingredients You Will Need

1 Butterfinger Candy Bar - Frozen
Pillsbury Chocolate Cake Mix with pudding in the mix
     (follow box directions for 24 cupcakes using Eggs, Oil, Water)
2/3 C Light Cream
1-1/2 C Semi-Sweet Chocolate Chips
1 t Vanilla Extract
1/2 C Crisco
1 C Creamy Peanut Butter
4 C 10x Powder
1/2 C Cold Light Cream

Directions:

Chocolate Ganache Filling

2/3 Cup Light Cream
1-1/2 Cups Semi-Sweet Chocolate Chips
1 t Vanilla Extract

To make the ganache, heat cream to a light boil, then pour into a bowl over the chocolate chips.  Allow to sit for 2 minutes and then stir gently until smooth.  Add vanilla and stir gently (to avoid adding air bubbles).



Spread the ganache into a baking dish, cool and then refrigerate in the chill drawer for several hours until firm.



Cupcakes

Follow the box directions and make 24 cupcakes, cool completely and then transfer them to a baking sheet and freeze for at least an hour.  The freezing process makes it easy to carve out a center hole for the ganache and will also make your cupcakes really moist!!!

Tip:  I place a pan of water in the oven underneath the cupcakes so that the tops of the cupcakes are less rounded.




When the cupcakes are slightly frozen, use a melon baller to  remove the center of the cupcake.  Keep the centers for later.

                



Using a small spring release cookie scoop, fill each of the cavities with ganache. Place the extra cupcake center on top and refreeze the cupcake until ready to frost.  







Peanut Butter Frosting
1/2 Cup Crisco 
1 Cup Creamy Peanut Butter (I use Jiff)
4 Cups 10X Powder
1/2 Cup Cold Light Cream (do not use skim milk)
1 t Vanilla
Beat crisco and peanut Butter until creamy.  Gradually add 10X Powder, Cream and Vanilla (a little of each at a time) until fluffy.  Frost the cupcakes with a 1M Wilton Star Tip and frost from outside to center of cupcake.  Sprinkle with crushed Butterfinger candy bar. (I freeze the candy bar, crush in the package with a meat tenderizer and place the crumbs in a small bowl.)

Beach Paintings & Lemon Sand Pudding

Today I would like to share my recipe for Lemon Sand Pudding and a collection of some of my beach related art.  Prints of the paintings are available at the following link.

Lemon Sand Pudding

1 -14.3 oz. package Golden Oreos or Lemon Oreos
8 oz. cream cheese (softened)
1 stick butter (softened)
2  -3.4 oz. (small) packages instant lemon pudding
3 cups milk
1 cup powdered sugar
16 oz. Cool Whip

Use a food processor to crush the cookies (little chunks are great) Set aside.  Then use the food processor or a heavy duty mixer to combine the cream cheese, butter and pudding (I add about 1/2 cup of the milk to make it blend easier).  Gradually add the remaining milk and powdered sugar.  When thoroughly mixed, fold in the cool whip on low speed.  Using a 10x13 dish, layer 1/2 of the pudding, then 1/2 of the cookie crumbs on top, then repeat.  Refrigerate overnight.  (I usually refrigerate it about 12 hours in my refrigerator chill drawer on the "warmest" setting.)  Decorate with little beach items if desired for a party theme.

Skinny Version:  Use 1/3 less fat cream cheese, skim milk, and omit the powdered sugar.  This still tastes amazing!!
