What To Do With Leftover Cooked Broccoli

I love salads, but sometimes it's nice to change it up and make a warm salad.  Today I'm sharing a creative way to use leftover cooked broccoli for a quick one serving warm salad, perfect for lunch.  I started with a little more than one cup of cooked broccoli florets that I reheated in the microwave.

Warm Broccoli Cranberry Walnut Salad

Ingredients

Leftover Tender Cooked Broccoli Florets
Danish Blue Cheese
Dried Cranberries
Chopped Walnuts
Kraft Creamy Poppyseed Dressing
Herb Seasoned Croutons

Directions

Reheat leftover broccoli in microwave.  Add a few crumbles of Danish Blue Cheese, a sprinkle of dried cranberries and chopped walnuts and a tablespoon or two of poppyseed dressing.  Top with herb seasoned croutons and enjoy.  If you love blue cheese like I do, you will love how creamy and slightly melted it gets over the warm broccoli.
